Homemade Vangi Bhath Powder (Brinjal Rice)

*Transfer the contents to an air tight container once opened.
* Store in a cool and dry place.
*Use a dry spoon.
Prepare Vangi Bhath for a family of 4
*Heat 2 tablespoon oil, add 1 teaspoon mustard + 1 teaspoon cumin + 1 teaspoon urad dal + 1 teaspoon channa dal + 2 tablespoon peanuts + 1 spring curry leaves + 4 to 5 red chilies. Saute and splutter on medium flame.
* Add 2 brinjals (sliced vertically) and saute for 2 minutes. Further add ¼ teaspoon turmeric + ½ cup tamarind extract + 4 teaspoon MOR Vangi bhath powder + ½ teaspoon jaggery + ½ teaspoon salt and cook well.
*Add 3 cups of cooked rice and mix well.
